how do I cook xmas pudding?

I have been given a home made xmas pud. No instructions. 7 of us on Sunday. What do I do. And what goes with it? I have some cornish ice cream in the freezer. Does that go?

Cornish Ice cream will be really nice with Christmas pudding.To cook the pudding you will need to steam it above a pot of boiling water for 2- 2 and a half hours depending on the size of the pudding. You will need a large pot to do this. Please steam, as microwaving will totally nuke it and you wont get the 1)the nice smell in the house or 2) the true flavours from the home made pudding.



When bringing to the table, pour some brandy on top and set on fire..so pretty and really christmassy!

Like the other people say, go with the steaming. Make sure you don't let the water boil away though else the pud will burn badly. Check the water level every 15 mins or so.



Also the brandy: don't heat it up as this can be dangerous. Just pour a little on the pud (don't use too much if you value your eyebrows) and light.



And Cornish ice-cream will go very well with the pud.

Wrap it in cloth and tie the ends and put it into a basin and boil it in a saucepan until cooked and all the flavor stays in the pudding--eat it with cornish ice cream and fresh double cream,add some brandy at the table and ignite

Mrs. Beeton's Traditional Christmas Plum Pudding 1



Recipe 1 (Page 494) - 1923 Edition



Makes 2 Christmas puddings



Ingredients







Check recipe for shopping/store cupboard purposes and grease 2 basins.



8 oz moist sugar (use soft brown )



8 oz chopped suet or modern day equivalent



8 oz sultanas cleaned



8 oz raisins halved and stoned



4 oz currants washed and dried



4 oz shredded mixed candied peel - Cut your own or use ready cut



4 oz of plain flour



4 oz breadcrumbs



2 oz almonds blanched and shredded



the grated rind of a 1 lemon



3 eggs



a salt spoonful of nutmeg grated



half a teaspoon of salt



quarter pint of milk



1 small wineglassful of brandy (optional)



Basic Method



Mix all the dry ingredients together, stir in the well beaten eggs, milk and brandy (if used).



Turn the mixture into 2 well greased basins, and steam from 5 to 6 hours.



Time 5 to 6 hours.



Sufficient for 8 or 9 persons.



N.B. Please note that no raising agent is mentioned in this recipe, but the flour must be plain flour, as elsewhere self raising flour is mentioned by type when used.

If you can steam it for about an hour maybe more, you could look at the puddings in the shops and just take note how the are meant to be cooked, I would not use a microwave I did many years ago and my pudding went like rubber and yes it did bounce,

Put the whole pudding bowl and all in a saucepan full of water so that the water is about 1/2 inch below the top of the bowl and bring to the boil. then simmer for about an hour or until the pudding is hot all the way through. keep the top of the bowl covered, greaseproof paper and a bit of muslin will be good enough, so that the water stays out of the bowl. serve with custard or rum-butter sauce or cream or ice cream as is your fancy.
