Like steak, seafood, contemporary, traditional, Italian cured meats, Spanish tapas, American, just all over the place? "International" makes it sound like some buffet of Mexican, Chinese, and Italian like those International cafeterias or mall food courts.

"Eclectic" is actually a category on most online restaurant databases, so I think that makes it a legitimate billing. Just call them eclectic.

If you were to say to me "I ate at an eclectic restaurant" I would not know what you were talking about. I'm thinking it's according to what type of people you are talking to. High, middle, low classes.

Fusion would be one way to describe it but with all the ones you have listed it would be ConFusion. I do not think a restaurant can do all of that and do it all well.
