Guess you can't get any more Southern than me- bottom of Alabama. I gather your wanting simple foods?
Try steamed cabbage - fry our several strips of bacon. Add shopped cabbage ( amount depending on how many your going to feed; I usually cook a whole cabbage for 5-6) and enough water to come about 1/3 way up to top of cabbage. Cover and cook on med heat Salt, pepper and butter(couple big teaspoons) and steam until done- just about 15 minutes. The grease from the bacon helps season it well, and you know us Southerners love the butter and margarine! LOL
A few good dishes and ideas for you to Google that are 100% Southern:
Chicken and Dumplins (nope, we dont' call the Dumplings)
Fried corn bread
Fried fish
Biscuits
Rice and tomato gravy is another good Southern dish:
Cook pot of rice, rinse and set aside
Fry out 5-6 strips of bacon and remove from pan.
To drippings, add 3-4 tbsp of flour and brown lightly
Add 1 can chopped tomatoes and 1 c. water and stir well.
Season with salt and pepper
This will feed 8-10 people, depending on how much rice you cook
