Good, easy, cheap southern foods?

For culinary class we are cooking food for the teachers, as usual, and this week were doing southern foods. Anything besides fried chicken? Were trying to keep it not to expensive, its for a lot of people. Thank you! Peace and love :)

Guess you can't get any more Southern than me- bottom of Alabama. I gather your wanting simple foods?

Try steamed cabbage - fry our several strips of bacon. Add shopped cabbage ( amount depending on how many your going to feed; I usually cook a whole cabbage for 5-6) and enough water to come about 1/3 way up to top of cabbage. Cover and cook on med heat Salt, pepper and butter(couple big teaspoons) and steam until done- just about 15 minutes.The grease from the bacon helps season it well, and you know us Southerners love the butter and margarine! LOL

A few good dishes and ideas for you to Google that are 100% Southern:

Chicken and Dumplins (nope, we dont' call the Dumplings)

Fried corn bread

Fried fish

Biscuits

Rice and tomato gravy is another good Southern dish:



Cook pot of rice, rinse and set aside

Fry out 5-6 strips of bacon and remove from pan.

To drippings, add 3-4 tbsp of flour and brown lightly

Add 1 can chopped tomatoes and 1 c. water and stir well.

Season with salt and pepper



This will feed 8-10 people, depending on how much rice you cook

I don't have it handy, but look up the recipe for Hoppin' John. It's basically a black-eyed pea dish over white rice, and it's really good. (Also supposed to bring luck in the new year.) A bag of black-eyed peas is well under a dollar, and rice is cheap too. There are a few veggies and some spices in it, but it's a pretty cheap meal that can feed a lot of people.

do a Cajun smoked pork chop with a corn relish and red bliss mashed potatoes. you will need...

1 pork chop, 3 ears corn, one red onion, 1/4lb bacon, 1 tomato, whiteg vinegar, 4-6 scallions and 1/2 bunch fresh parsley

for the pork chop just season with Cajun spices and smoke or grill chop.



corn relish--render about qtr pound of bacon in a saute pan. once bacon is rendered add chopped red onion and diced tomatoes, saute and keep product moving, it will want to stick so you can de-glaze with white vinegar. de-cob the corn and saute in separate pan until browned a little. add corn to other mixture and finally add a few scallions and chopped parsley to the mix. (a little sugar may be needed if you over do it with the vinegar)

Chicken and dumplings?I have a great recipe that always is liked by everyone.I like it with southern cornbread.Also good with blackeye peas.I am from Texas and have always cooked southern.I will tell you that you can go to southernliving.com or food.com for some good recipe's.

Mine would be a good mince and veggie stew with mashed potatoes and the gravy from the stew, cheap and easy as you can use whatever mince and veggies that are cheap where you are.
