red milk? are you talking about the label on the plastic bottle? then you are drinking whole milk. i live in NYC too and i have never seen milk (the actual milk) red. skim milk has less fat in it compared to whole milk.

EDIT: i see. the purple is for the percent milk (1% or 2%). the blue was the skim, red whole. i have never seen orange caps.

It's hard to say the colors you are talking about, because it depends on brand, and generally brands also depend on location. You are getting local dairy farm milk, you know? So it would be hard to guess. Most all the time the red cap is whole milk. And then the other colors would be 2%, 1% and Skim. Whole Milk has the most fat. And then the others have less. . .2% of the milk fat, 1%, and then skim is like fat free. So you'll notice it's much thinner than whole milk and has less of a "milk" taste. It'll seem watery, if you are used to drinking whole milk, but it is generally better for you.

Milk is graded by the amount of cream or butter-fat contained.

Old-fashioned whole milk use to have the cream floating on top.

Then the dairies added emulsifiers to homogenize the cream & milk.

They also removed the cream & sold it at a higher price.

Now you can buy Skim, 1%, 2%, or 4%, which are the colour codes.

Whole fat milk = red cap

Fat-free skim milk = light blue cap

1/2% = green cap

1% = pink cap

2% = dark blue cap

Whole milk contains all the fat. Skim milk has less fat than whole milk.

whole milk is milk with everything milk should contain and skim milk is less fat than whole milk. There is 1%, reduce fat, soy milk, flavored milk (chocolate, strawberry, vanilla, etc.), goat milk, oat milk, flavored soy milk, dry milk, evaporated milk. I think the red label on your milk is the brand of whole milk. good luck!
