I like to poach kippers in a little bit of milk, make sure to simmer rather than boil.Add a knob of butter when poached and a sprinkle of pepper.Mmmm you've made me hungry now, haven't had kippers for ages ;o)

with the skin side to bottom, cover in butter and place under the grill to heat through for about 3-4 mins, then turn over and grill again, this will have the effect of tightening the skin making the tail curl up, this will make it easier to remove the back bone, now enjoy with a slice of bread or toast.
Two of the best kippers around are fresh "Craster or Manx" kippers, stunning, or for a packet kipper try M&S, not bad as a quick treat.

The Co-op does these in the fridged section Scottish smoked kippers some peppered or plain, rarely a bone, no bones about it, but always beware! Regulary I get these they are vaccum prepacked the best I've found likes these (licks lips). And last kept in the chiller.

You just pop them under the grill and heat them through.
Carefully lift the entire backbone off the fish in one piece, and then be wary of the tiny bones that are near the centre.
Best followed up with thick toast and marmalade & a pot of tea.
I haven't had a kipper since I left UK in 1974, and you have just made me lust for a pair.

WARNING : I would not cook them in your house as it will stink of smelly kippers for days best off taking them to your mothers put them in a microwaveable dish with a knob of butter on top and microwave for 2-3 minutes.

Lightly grill them on both sides until the oil runs. Serve with a sprinkling of vinegar and a dob of butter, and preferably with Hovis and butter. Of course, they'll stink the house out, so next time, try the 'boil in the bag' package. Just the same only no smell AND NO BONES! ! !

You are best cooking them on a bar-b-cue outside or close all the doors leading from your kitchen, open back door and windows, turn the extractor onto full and grill them, eat them in the kitchen with bread and butter, careful of the bones OR you can send them to me I love them and haven't had any for ages
